In this book we choose to use two ways to translate the names of the dishes. One is free translation, which is common throughout China. the other one is specially singed by us. we made it by spell their pronunciations. We did this for foreign friends who want to order dishes. They can say the accent of the dishes and the tongues may not be correct but the waiter can understand easily.
